Quinoa salad With Chicken, Grapes And Almonds
Ingredients:
* 1/2 cup quinoa
* 1 cup of fresh green grapes,
* 1/2 cup of toasted almonds
* 1 sprig of parsley or cilantro
* salt and pepper to taste
* 2 tablespoons of olive oil or your favorite oil
* 1 tablespoon of apple cider vinegar or wine
* A chicken breast (clean or breaded) in strips
Preparation:
* Rinse the quinoa with cold water and strain.
* Put 2 cups of water in a medium pot and boil.
* Adds and removes the quinoa along with a pinch of salt in boiling water.
* Low the fire, cover the pot and cooking to simmer until the quinoa is cooked, about 15 to 20 minutes.
* Uncover and leave to cool the quinoa.
* Seasoned: added slowly to the quinoa the oil, vinegar, salt and pepper.
* Add the chicken strips, grapes and almonds and mix again.
* Garnish with parsley or cilantro.
